Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 50 ml
  • Water - 60 ml
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1, beaten
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a large bowl, mix the all-purpose flour and salt. Add the olive oil and water, then knead until a smooth dough forms. Cover with a damp cloth and let it rest for 15 minutes.
  2. In another bowl, combine the feta, ricotta, Parmesan, beaten egg, parsley, dill, pepper, and mix well until smooth.
  3. Preheat the oven to 180°C (350°F).
  4. Divide the dough into 4 equal portions and roll each into a thin circle on a floured surface.
  5. Place a spoonful of the cheese mixture in the center of each circle, then fold the dough over to create a half-moon shape. Press the edges to seal and crimp with a fork.
  6. Place the pies on a baking sheet lined with parchment paper. Brush the tops with a little olive oil.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
  8. Remove from the oven and let cool slightly before serving.
