Ingredients

  • All-purpose flour - 150 grams
  • Butter, unsalted - 75 grams
  • Cold water - 50 ml
  • Feta cheese, crumbled - 100 grams
  • Greek yogurt - 100 grams
  • Eggs - 2 large
  • Spinach, fresh - 100 grams
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. While the dough chills, wash and chop the spinach. Heat olive oil in a skillet over medium heat and sauté the spinach until wilted. Remove from heat and let cool.
  5. In a separate bowl, whisk together the eggs, feta cheese, and Greek yogurt. Add the cooled spinach and mix well. Season with black pepper.
  6. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish, trimming any excess.
  7. Pour the cheese and spinach mixture into the pie crust, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  9. Remove from the oven and let cool for a few minutes before slicing and serving.
