- All-purpose flour - 150 grams
- Butter, unsalted - 75 grams
- Cold water - 50 ml
- Feta cheese, crumbled - 100 grams
- Greek yogurt - 100 grams
- Eggs - 2 large
- Spinach, fresh - 100 grams
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, wash and chop the spinach. Heat olive oil in a skillet over medium heat and sauté the spinach until wilted. Remove from heat and let cool.
- In a separate bowl, whisk together the eggs, feta cheese, and Greek yogurt. Add the cooled spinach and mix well. Season with black pepper.
- Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish, trimming any excess.
- Pour the cheese and spinach mixture into the pie crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Remove from the oven and let cool for a few minutes before slicing and serving.
