Ingredients
- phyllo dough - 4 sheets
- fresh spinach - 150 grams, chopped
- feta cheese - 100 grams, crumbled
- onion - 1 small, finely chopped
- olive oil - 2 tablespoons
- egg - 1 large, beaten
- black pepper - 1/2 teaspoon
- salt - 1/4 teaspoon
- nutmeg - a pinch
- sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
- In a mixing bowl, combine the sautéed spinach and onion with crumbled feta cheese, beaten egg, black pepper, salt, and a pinch of nutmeg. Mix well.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again.
- Spoon a portion of the filling along one edge of the phyllo, then fold the edges over and roll into a log shape, sealing the ends.
- Repeat the process with the remaining phyllo sheets and filling.
- Place the bougatsa on a baking sheet lined with parchment paper, brush the tops with olive oil, and sprinkle with sesame seeds if using.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crisp.
- Allow to cool slightly before serving.
