Ingredients

  • Fresh sardines - 4 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Whole grain bread - 2 slices

Steps

  1. Preheat a grill or broiler on high.
  2. Clean the sardines by removing the heads and guts, then rinse under cold water and pat dry.
  3. In a bowl, combine the cherry tomatoes, minced garlic, parsley, dill, lemon juice, salt, and black pepper. Mix well.
  4. Brush the sardines with olive oil and season with salt and pepper.
  5. Place the sardines on the grill or under the broiler for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
  6. While the sardines are cooking, toast the slices of whole grain bread until golden brown.
  7. Once the sardines are cooked, assemble the dish by placing the sardines on the toasted bread and topping them with the tomato and herb mixture.
  8. Drizzle with a little extra olive oil if desired and serve immediately.
