Ingredients
- Fresh sardines - 4 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200g, halved
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Whole grain bread - 2 slices
Steps
- Preheat a grill or broiler on high.
- Clean the sardines by removing the heads and guts, then rinse under cold water and pat dry.
- In a bowl, combine the cherry tomatoes, minced garlic, parsley, dill, lemon juice, salt, and black pepper. Mix well.
- Brush the sardines with olive oil and season with salt and pepper.
- Place the sardines on the grill or under the broiler for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- While the sardines are cooking, toast the slices of whole grain bread until golden brown.
