Ingredients

  • Cherry tomatoes - 200 grams
  • Cucumber - 1 medium (approximately 200 grams)
  • Red onion - 1 small (approximately 50 grams)
  • Bell pepper (any color) - 1 medium (approximately 150 grams)
  • Kalamata olives - 50 grams
  • Fresh parsley - 15 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and halve the cherry tomatoes.
  2. Peel and chop the cucumber into bite-sized pieces.
  3. Peel and thinly slice the red onion.
  4. Core and dice the bell pepper into small cubes.
  5. In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and Kalamata olives.
  6. Chop the fresh parsley and add it to the bowl with the vegetables.
  7. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.
  8. Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
