  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Plant-based kavourmas (store-bought or homemade) - 100 grams, diced

Steps

  1. In a mixing bowl, combine diced cucumber, diced tomatoes, sliced red onion, and diced bell pepper.
  2. Add the pitted Kalamata olives and capers to the bowl.
  3. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
