Ingredients

  • Ripe tomatoes - 300 grams
  • Cucumber - 150 grams
  • Red onion - 50 grams
  • Green bell pepper - 100 grams
  • Kalamata olives - 50 grams
  • Fresh parsley - 15 grams
  • Extra virgin olive oil - 30 ml
  • Red wine vinegar - 15 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Wash the tomatoes, cucumber, and bell pepper thoroughly under running water.
  2. Dice the tomatoes into bite-sized pieces and place them in a salad bowl.
  3. Chop the cucumber into half-moon slices and add it to the bowl with the tomatoes.
  4. Thinly slice the red onion and green bell pepper, then add them to the salad bowl.
  5. Pit and slice the Kalamata olives, then mix them in with the other ingredients.
  6. Finely chop the fresh parsley and sprinkle it over the salad.
  7. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  8. Pour the dressing over the salad and toss gently to combine all the ingredients.
