Ingredients

  • Kefalotyri cheese - 200 grams
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste
  • Lemon wedges - for serving

Steps

  1. Cut the Kefalotyri cheese into 1 cm thick slices.
  2. Heat the olive oil in a non-stick frying pan over medium heat.
  3. Once the oil is hot, add the cheese slices and fry for about 2-3 minutes on each side until golden brown and crispy.
  4. While the cheese is frying, crack the eggs into a bowl and season with salt and black pepper.
  5. Once the cheese is ready, carefully remove it from the pan and set aside on a plate.
  6. In the same pan, add the eggs and cook them sunny-side up or to your desired doneness, about 2-3 minutes.
  7. To serve, place the fried cheese on a plate, top with the cooked eggs, and sprinkle with fresh parsley.
  8. Serve immediately with lemon wedges on the side.
