- Cornstarch - 2 tablespoons (30 grams)
- Olive oil - 3 tablespoons
- Lemon - 1 (for juice and zest)
- Fresh parsley - 2 tablespoons (chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Cucumber - 1 small (for garnish)
- Cherry tomatoes - 100 grams (for garnish)
Steps
- 1. Slice the vegan cheese into thick slices (about 1 cm each).
- 2. In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika.
- 3. Heat olive oil in a non-stick skillet over medium heat.
- 4. Dredge each slice of vegan cheese in the flour mixture, ensuring all sides are coated.
- 5. Once the oil is hot, carefully place the coated cheese slices in the skillet, cooking for about 2-3 minutes on each side until golden brown and crispy.
- 6. While the cheese is cooking, prepare the dressing by mixing the juice and zest of the lemon with chopped parsley in a small bowl.
- 7. Remove the fried cheese from the skillet and place it on a paper towel to drain any excess oil.
- 8. Serve the crispy vegan cheese hot, drizzled with the lemon-parsley dressing, and garnish with cucumber slices and cherry tomatoes.
