Ingredients

  • Vegan cheese (block) - 200 grams
  • All-purpose flour - 1/2 cup (60 grams)
  • Cornstarch - 2 tablespoons (30 grams)
  • Olive oil - 3 tablespoons
  • Lemon - 1 (for juice and zest)
  • Fresh parsley - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Cucumber - 1 small (for garnish)
  • Cherry tomatoes - 100 grams (for garnish)

Steps

  1. 1. Slice the vegan cheese into thick slices (about 1 cm each).
  2. 2. In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika.
  3. 3. Heat olive oil in a non-stick skillet over medium heat.
  4. 4. Dredge each slice of vegan cheese in the flour mixture, ensuring all sides are coated.
  5. 5. Once the oil is hot, carefully place the coated cheese slices in the skillet, cooking for about 2-3 minutes on each side until golden brown and crispy.
  6. 6. While the cheese is cooking, prepare the dressing by mixing the juice and zest of the lemon with chopped parsley in a small bowl.
  7. 7. Remove the fried cheese from the skillet and place it on a paper towel to drain any excess oil.
  8. 8. Serve the crispy vegan cheese hot, drizzled with the lemon-parsley dressing, and garnish with cucumber slices and cherry tomatoes.
