  • Whole wheat flour - 50 grams
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste

Steps

  1. Cut the feta cheese into 1 cm thick slices and pat them dry with a paper towel.
  2. In a shallow plate, spread the whole wheat flour evenly.
  3. Dredge each slice of feta cheese in the flour, coating both sides, and shake off any excess flour.
  4. Heat the olive oil in a non-stick skillet over medium heat.
  5. Once hot, add the floured feta slices to the skillet and fry for about 2-3 minutes on each side until golden and crispy.
  6. Remove the fried cheese from the skillet and place it on a paper towel to absorb excess oil.
  7. In a small bowl, combine the halved cherry tomatoes, chopped parsley, lemon juice, salt, and black pepper.
  8. Serve the fried feta hot, topped with the tomato and parsley mixture, and a drizzle of olive oil if desired.
