Ingredients

  • Halloumi cheese - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Whole grain bread - 2 slices

Steps

  1. Preheat a non-stick skillet over medium heat.
  2. Cut the Halloumi cheese into 1 cm thick slices.
  3. Add 1 tablespoon of olive oil to the skillet, coating the bottom evenly.
  4. Place the cheese slices in the skillet, cooking for about 2-3 minutes on each side until golden brown.
  5. While the cheese is cooking, toast the whole grain bread in a toaster or on another skillet.
  6. Once the cheese is cooked, remove it from the skillet and place it on a plate.
  7. Drizzle the remaining olive oil over the cheese, squeeze fresh lemon juice on top, and sprinkle with chopped parsley and black pepper.
  8. Serve immediately alongside the toasted bread.
