- Jasmine rice - 100 grams
- Water - 500 ml
- Whole milk - 200 ml
- Greek yogurt - 100 grams
- Honey - 2 tablespoons
- Saffron strands - 0.1 grams
- Cardamom powder - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Chopped pistachios - 20 grams
- Ground cinnamon - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low and cover. Cook for 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, soak the saffron strands in 2 tablespoons of warm milk for about 10 minutes.
- Once the rice is cooked, stir in the remaining milk, saffron-infused milk, honey, cardamom powder, and vanilla extract. Cook over low heat for an additional 5-7 minutes, stirring frequently until the mixture thickens.
- Remove from heat and let the pudding cool slightly, then stir in the Greek yogurt until well combined.
- Divide the rice pudding between two serving bowls, and top with chopped pistachios and a sprinkle of ground cinnamon before serving.
