Ingredients

  • Jasmine rice - 100 grams
  • Water - 500 ml
  • Whole milk - 200 ml
  • Greek yogurt - 100 grams
  • Honey - 2 tablespoons
  • Saffron strands - 0.1 grams
  • Cardamom powder - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Chopped pistachios - 20 grams
  • Ground cinnamon - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low and cover. Cook for 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, soak the saffron strands in 2 tablespoons of warm milk for about 10 minutes.
  4. Once the rice is cooked, stir in the remaining milk, saffron-infused milk, honey, cardamom powder, and vanilla extract. Cook over low heat for an additional 5-7 minutes, stirring frequently until the mixture thickens.
  5. Remove from heat and let the pudding cool slightly, then stir in the Greek yogurt until well combined.
  6. Divide the rice pudding between two serving bowls, and top with chopped pistachios and a sprinkle of ground cinnamon before serving.
