Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Saffron threads - 0.5 grams
  • Olive oil - 2 tablespoons
  • Pine nuts - 30 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
  2. Rinse the basmati rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the pine nuts and sauté until golden brown, about 2-3 minutes, stirring frequently.
  4. Add the chopped red onion to the pan and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.
  5. Stir in the drained basmati rice and sauté for 2-3 minutes to toast the rice lightly.
  6. Pour in the water, saffron with its soaking water, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is tender and all the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon zest before serving.
