Ingredients

  • Cauliflower Rice - 400 grams
  • Saffron Threads - 0.1 grams
  • Vegetable Broth - 250 ml
  • Olive Oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red Bell Pepper - 1, diced
  • Green Peas - 50 grams, fresh or frozen
  • Salt - to taste
  • Black Pepper - to taste
  • Fresh Parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for 10 minutes.
  2. In a large skillet, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent, about 5 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until the pepper is tender.
  4. Stir in the cauliflower rice and cook for another 5 minutes, stirring occasionally.
  5. Pour in the remaining vegetable broth along with the saffron mixture, and add the green peas. Season with salt and black pepper to taste.
  6. Cover the skillet and simmer for 10-12 minutes, or until the cauliflower rice is tender and the liquid is absorbed.
  7. Remove from heat and fluff the rice with a fork. Stir in freshly chopped parsley before serving.
