- Cauliflower Rice - 400 grams
- Saffron Threads - 0.1 grams
- Vegetable Broth - 250 ml
- Olive Oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red Bell Pepper - 1, diced
- Green Peas - 50 grams, fresh or frozen
- Salt - to taste
- Black Pepper - to taste
- Fresh Parsley - 2 tablespoons, chopped
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for 10 minutes.
- In a large skillet, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until the pepper is tender.
- Stir in the cauliflower rice and cook for another 5 minutes, stirring occasionally.
- Pour in the remaining vegetable broth along with the saffron mixture, and add the green peas. Season with salt and black pepper to taste.
- Cover the skillet and simmer for 10-12 minutes, or until the cauliflower rice is tender and the liquid is absorbed.
- Remove from heat and fluff the rice with a fork. Stir in freshly chopped parsley before serving.
