Ingredients

  • 2 whole grain burger buns
  • 1 large roasted red pepper, peeled and seeded
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/2 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup tzatziki sauce
  • Olive oil for cooking

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the cooked quinoa, crumbled feta cheese, chopped red onion, minced garlic, dried oregano, smoked paprika, salt, pepper, and chopped parsley.
  3. Mash the mixture lightly with a fork until well combined.
  4. Form the mixture into 2 equally sized patties.
  5. Heat a tablespoon of olive oil in a skillet over medium heat.
  6. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  7. While the patties are cooking, place the whole grain burger buns in the oven for 5 minutes to toast.
  8. Assemble the burgers by placing each quinoa patty on a toasted bun, topping with a slice of roasted red pepper and a generous dollop of tzatziki sauce.
