- Cauliflower rice - 300 grams
- Red bell pepper - 1 medium, diced
- Yellow bell pepper - 1 medium, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, toss the diced red and yellow bell peppers with 1 tablespoon of olive oil, salt, and pepper. Roast in the oven for about 20 minutes until they are tender and slightly charred.
- While the peppers are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the cauliflower rice and oregano, cooking for about 5-7 minutes until heated through and slightly softened.
- Add the roasted peppers and cherry tomatoes to the skillet, mixing well. Cook for another 2-3 minutes until everything is heated through.
- Remove from heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice. Adjust seasoning with salt and pepper as needed.
- Serve warm, garnished with extra parsley if desired.
