Ingredients

  • Cauliflower rice - 300 grams
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, toss the diced red and yellow bell peppers with 1 tablespoon of olive oil, salt, and pepper. Roast in the oven for about 20 minutes until they are tender and slightly charred.
  3. While the peppers are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  5. Stir in the cauliflower rice and oregano, cooking for about 5-7 minutes until heated through and slightly softened.
  6. Add the roasted peppers and cherry tomatoes to the skillet, mixing well. Cook for another 2-3 minutes until everything is heated through.
  7. Remove from heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice. Adjust seasoning with salt and pepper as needed.
  8. Serve warm, garnished with extra parsley if desired.
