- Lamb shoulder - 800 grams
- Garlic - 4 cloves, minced
- Olive oil - 3 tablespoons
- Fresh oregano - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Rosemary - 1 tablespoon, chopped
- Paprika - 1 teaspoon
- Water - 200 ml
Steps
- Preheat your oven to 160°C (320°F).
- In a mixing bowl, combine minced garlic, olive oil, chopped oregano, lemon juice, salt, black pepper, chopped rosemary, and paprika to create a marinade.
- Rub the marinade evenly over the lamb shoulder, ensuring it is well coated. Let it marinate for at least 30 minutes (or overnight in the refrigerator for better flavor).
- Place the marinated lamb shoulder in a roasting dish and pour the water around it to keep the meat moist during cooking.
- Cover the dish with aluminum foil and roast in the preheated oven for 2 hours.
- After 2 hours, remove the foil and increase the oven temperature to 220°C (428°F).
- Roast uncovered for an additional 30-40 minutes, or until the lamb is browned and crispy on the outside.
- Once done, remove the lamb from the oven and let it rest for 10 minutes before slicing.
