Ingredients

  • Lamb shoulder - 800 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh oregano - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Rosemary - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Water - 200 ml

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a mixing bowl, combine minced garlic, olive oil, chopped oregano, lemon juice, salt, black pepper, chopped rosemary, and paprika to create a marinade.
  3. Rub the marinade evenly over the lamb shoulder, ensuring it is well coated. Let it marinate for at least 30 minutes (or overnight in the refrigerator for better flavor).
  4. Place the marinated lamb shoulder in a roasting dish and pour the water around it to keep the meat moist during cooking.
  5. Cover the dish with aluminum foil and roast in the preheated oven for 2 hours.
  6. After 2 hours, remove the foil and increase the oven temperature to 220°C (428°F).
  7. Roast uncovered for an additional 30-40 minutes, or until the lamb is browned and crispy on the outside.
  8. Once done, remove the lamb from the oven and let it rest for 10 minutes before slicing.
  9. Serve warm with a side of grilled vegetables or a fresh salad.
