Ingredients

  • Lamb chops - 4 pieces (about 400g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Dried oregano - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, oregano, lemon juice, salt, and black pepper.
  2. Add the lamb chops to the marinade and coat well. Cover and let marinate for at least 15 minutes at room temperature (or up to 2 hours in the refrigerator for more flavor).
  3. Preheat the oven to 200°C (400°F).
  4. Place the marinated lamb chops on a baking tray lined with parchment paper.
  5. Roast in the preheated oven for 15-20 minutes, turning halfway through, until the lamb reaches your desired doneness (medium-rare is about 60°C or 140°F).
  6. Remove from the oven and let the lamb chops rest for 5 minutes before serving.
