- Lamb chops - 4 pieces (about 400g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, oregano, lemon juice, salt, and black pepper.
- Add the lamb chops to the marinade and coat well. Cover and let marinate for at least 15 minutes at room temperature (or up to 2 hours in the refrigerator for more flavor).
- Preheat the oven to 200°C (400°F).
- Place the marinated lamb chops on a baking tray lined with parchment paper.
- Roast in the preheated oven for 15-20 minutes, turning halfway through, until the lamb reaches your desired doneness (medium-rare is about 60°C or 140°F).
