Ingredients

  • Beetroot - 200 grams, roasted and peeled
  • Chickpeas - 1 cup, cooked
  • Oats - 1/2 cup, rolled
  • Red onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Tzatziki sauce - 1/2 cup (store-bought or homemade)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beetroot in aluminum foil and roast in the oven for about 30-35 minutes, or until tender. Let cool, then peel and chop.
  3. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some texture.
  4. Add the roasted beetroot, oats, red onion, garlic, parsley, dill, olive oil, lemon juice, cumin, salt, and pepper to the mashed chickpeas. Mix until well combined.
  5. Form the mixture into two patties. If the mixture is too wet, add more oats until it holds together.
  6. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, until golden brown.
  7. Warm the pita bread in the oven for a few minutes or on a skillet.
  8. Assemble the burgers by placing each patty in a pita, topping with tzatziki sauce, and adding any additional toppings like lettuce or cucumber if desired.
