  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Prepare the artichokes by trimming the stems and cutting about 1 inch off the top. Remove the tough outer leaves and cut the artichokes in half lengthwise.
  3. In a bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, dried oregano, salt, and black pepper.
  4. Brush the artichoke halves generously with the olive oil mixture, ensuring they are well coated.
  5. Place the artichoke halves cut-side down on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 30-35 minutes, or until the artichokes are tender and the edges are golden brown.
