Ingredients

  • Arborio rice - 150 grams
  • Fresh spinach - 200 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a medium pot, heat the vegetable broth and keep it warm on low heat.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly while stirring frequently.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more.
  6. Continue this process for about 15-20 minutes, until the rice is creamy and al dente.
  7. When the rice is nearly done, add the fresh spinach and cook until it wilts, about 2-3 minutes.
  8. Stir in the lemon juice, grated Parmesan cheese, chopped dill, and parsley. Season with salt and black pepper to taste.
  9. Remove from heat, let it sit for a couple of minutes, and then serve warm.
