- Arborio rice - 150 grams
- Fresh spinach - 200 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a medium pot, heat the vegetable broth and keep it warm on low heat.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly while stirring frequently.
- Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more.
- Continue this process for about 15-20 minutes, until the rice is creamy and al dente.
- When the rice is nearly done, add the fresh spinach and cook until it wilts, about 2-3 minutes.
- Stir in the lemon juice, grated Parmesan cheese, chopped dill, and parsley. Season with salt and black pepper to taste.
- Remove from heat, let it sit for a couple of minutes, and then serve warm.
