- Arborio rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Mushrooms (button or cremini) - 200 grams, sliced
- Vegetable broth - 500 ml
- White wine - 100 ml
- Parmesan cheese (grated) - 30 grams
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
- In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the pan, cooking until the mushrooms are tender and browned, about 7-8 minutes.
- Stir in the Arborio rice, allowing it to toast for about 2 minutes until slightly translucent.
- Pour in the white wine and stir until it has mostly evaporated.
- Begin adding the warm vegetable broth, one ladle at a time, stirring continuously and allowing the rice to absorb the liquid before adding more. Repeat this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, remove the pan from the heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Let it sit for 2 minutes before serving, garnished with additional parsley if desired.
