  • Chopped nuts (almonds or walnuts) - 2 tablespoons
  • Ground cinnamon for garnish - to taste

Steps

  1. In a medium saucepan, combine the Arborio rice, almond milk, coconut milk, maple syrup, vanilla extract, cinnamon powder, and a pinch of salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer, stirring frequently, for about 20-25 minutes or until the rice is tender and the mixture has thickened.
  3. Once the rice pudding reaches your desired consistency, remove it from heat and let it cool slightly.
