Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and diced zucchini to the saucepan, cooking for another 4-5 minutes until the zucchini starts to soften.
  4. Stir in the rinsed rice, allowing it to toast slightly for about 1 minute, stirring frequently.
  5. Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is cooked and has absorbed all the liquid.
  7. Remove from heat, add the fresh dill and lemon juice, and fluff the rice gently with a fork before serving.
