- Basmati rice - 150 grams
- Zucchini - 200 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Fresh dill - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and diced zucchini to the saucepan, cooking for another 4-5 minutes until the zucchini starts to soften.
- Stir in the rinsed rice, allowing it to toast slightly for about 1 minute, stirring frequently.
- Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is cooked and has absorbed all the liquid.
- Remove from heat, add the fresh dill and lemon juice, and fluff the rice gently with a fork before serving.
