- Long-grain rice - 150 grams
- Fresh spinach - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese (optional) - 50 grams, crumbled
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the rinsed rice to the pot and stir to coat the rice with the garlic and oil for about 2 minutes.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Meanwhile, in a separate pan, add the fresh spinach and cook over medium heat until wilted, about 3-4 minutes. Season with salt and pepper.
- Once the rice is done, remove it from the heat and fluff it with a fork. Stir in the cooked spinach, lemon juice, and adjust seasoning as needed.
- Serve warm, topped with crumbled feta cheese if desired.
