Ingredients

  • Long-grain rice - 150 grams
  • Fresh spinach - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese (optional) - 50 grams, crumbled

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the rinsed rice to the pot and stir to coat the rice with the garlic and oil for about 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  5. Meanwhile, in a separate pan, add the fresh spinach and cook over medium heat until wilted, about 3-4 minutes. Season with salt and pepper.
  6. Once the rice is done, remove it from the heat and fluff it with a fork. Stir in the cooked spinach, lemon juice, and adjust seasoning as needed.
  7. Serve warm, topped with crumbled feta cheese if desired.
