Ingredients

  • Basmati rice - 150 grams
  • Fresh or frozen peas - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed basmati rice and toast it for about 2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, add the peas and stir gently. Cover again and cook for another 5 minutes until the rice is tender and the peas are heated through.
  7. Remove from heat, stir in the lemon juice and chopped dill, and season with salt and black pepper to taste.
  8. Let it sit covered for 5 minutes before serving. Fluff the rice with a fork and serve warm.
