- Fresh or frozen peas - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 milliliters
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed basmati rice and toast it for about 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the peas and stir gently. Cover again and cook for another 5 minutes until the rice is tender and the peas are heated through.
- Remove from heat, stir in the lemon juice and chopped dill, and season with salt and black pepper to taste.
- Let it sit covered for 5 minutes before serving. Fluff the rice with a fork and serve warm.
