Ingredients
- Brown rice - 100 grams
- Green or brown lentils - 75 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 400 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pan, cooking for an additional 3-4 minutes until softened.
- Stir in the rinsed lentils, followed by the brown rice, dried oregano, and dried thyme. Mix well to combine all ingredients.
- Pour in the vegetable broth and season with salt and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 25-30 minutes or until the lentils and rice are tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
- Serve warm, garnished with fresh parsley.
