Ingredients

  • Brown rice - 100 grams
  • Green or brown lentils - 75 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 400 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced celery to the pan, cooking for an additional 3-4 minutes until softened.
  4. Stir in the rinsed lentils, followed by the brown rice, dried oregano, and dried thyme. Mix well to combine all ingredients.
  5. Pour in the vegetable broth and season with salt and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 25-30 minutes or until the lentils and rice are tender and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
  8. Serve warm, garnished with fresh parsley.
