Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced carrot, cooking for another 3 minutes until fragrant.
- Add the diced lamb to the pot, browning it on all sides, approximately 5-7 minutes.
- Sprinkle in the cumin, cinnamon, salt, and black pepper. Stir well to coat the lamb with the spices.
- Add the chopped tomato and vegetable broth, bringing the mixture to a simmer. Cover the pot and let it cook for 20 minutes until the lamb is tender.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. This removes excess starch.
- After 20 minutes, stir in the rinsed rice into the pot with the lamb. Ensure the rice is evenly distributed.
- Cover the pot again and let it cook for an additional 15 minutes on low heat, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped parsley and serve warm.
