Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper to the skillet and cook for 3-4 minutes until softened.
- Once the rice is done, fluff it with a fork and add it to the skillet with the cooked vegetables, stirring to combine.
- Remove from heat and fold in the diced cucumber, halved cherry tomatoes, crumbled feta cheese, fresh parsley, lemon juice, salt, and black pepper.
- Serve warm or at room temperature, garnished with additional parsley if desired.
