- Basmati rice - 150 grams
- Fennel bulb - 1 medium (about 200 grams)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- While the rice soaks, trim the fennel bulb, remove the tough outer layers, and slice it thinly.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sliced fennel to the pan, and cook for an additional 5 minutes until the fennel is softened.
- Stir in the drained rice, mixing well to coat the grains with the oil and vegetables.
- Pour in the vegetable broth, add lemon juice, and season with salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and has absorbed the broth.
- Remove from heat, fluff the rice with a fork, and fold in the chopped dill. Adjust seasoning if necessary.
- Serve warm, garnished with additional dill if desired.
