- Basmati rice - 150 grams
- Artichoke hearts (canned or frozen) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until the onion becomes translucent.
- Add the minced garlic to the saucepan and sauté for another minute until fragrant.
- Stir in the rinsed rice and cook for 2 minutes, allowing it to toast slightly.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, drain and rinse the artichoke hearts if using canned, or thaw if frozen.
- After 15 minutes, remove the saucepan from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork and gently fold in the artichoke hearts, chopped dill, parsley, lemon juice, salt, and black pepper.
- Serve warm, garnished with additional herbs if desired.
