Ingredients

  • Basmati rice - 150 grams
  • Artichoke hearts (canned or frozen) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until the onion becomes translucent.
  3. Add the minced garlic to the saucepan and sauté for another minute until fragrant.
  4. Stir in the rinsed rice and cook for 2 minutes, allowing it to toast slightly.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. While the rice is cooking, drain and rinse the artichoke hearts if using canned, or thaw if frozen.
  7. After 15 minutes, remove the saucepan from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork and gently fold in the artichoke hearts, chopped dill, parsley, lemon juice, salt, and black pepper.
  9. Serve warm, garnished with additional herbs if desired.
