Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Bay leaf - 1
  • Thyme - 1 teaspoon (dried)
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  2. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  3. Drain the soaked chickpeas and add them to the pot along with the bay leaf, thyme, salt, and water. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the chickpeas are tender.
  5. Once cooked, remove the bay leaf and use an immersion blender to puree the soup to your desired consistency. You can leave it chunky or blend it until smooth.
  6. Stir in the lemon juice and season with additional salt and black pepper to taste.
  7. Serve hot, garnished with chopped parsley.
