Ingredients
- Chickpeas - 200 grams (soaked overnight)
- Water - 1 liter
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Bay leaf - 1
- Thyme - 1 teaspoon (dried)
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Drain the soaked chickpeas and add them to the pot along with the bay leaf, thyme, salt, and water. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the chickpeas are tender.
- Once cooked, remove the bay leaf and use an immersion blender to puree the soup to your desired consistency. You can leave it chunky or blend it until smooth.
- Stir in the lemon juice and season with additional salt and black pepper to taste.
- Serve hot, garnished with chopped parsley.
