Ingredients

  • Canned chickpeas - 1 cup (240g)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 medium, diced (150g)
  • Garlic - 3 cloves, minced
  • Crushed tomatoes - 1 cup (240g)
  • Vegetable broth - 1 cup (240ml)
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the crushed tomatoes, vegetable broth, dried oregano, paprika, cumin, salt, and black pepper. Bring the mixture to a simmer.
  4. Add the canned chickpeas to the pot and stir to combine. Reduce the heat to low and cover, allowing the stew to simmer for 30 minutes, stirring occasionally.
  5. Once the stew has thickened, taste and adjust seasoning if necessary. Remove from heat and stir in the chopped fresh parsley.
