- Onion - 1 medium, diced (150g)
- Garlic - 3 cloves, minced
- Crushed tomatoes - 1 cup (240g)
- Vegetable broth - 1 cup (240ml)
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the crushed tomatoes, vegetable broth, dried oregano, paprika, cumin, salt, and black pepper. Bring the mixture to a simmer.
- Add the canned chickpeas to the pot and stir to combine. Reduce the heat to low and cover, allowing the stew to simmer for 30 minutes, stirring occasionally.
- Once the stew has thickened, taste and adjust seasoning if necessary. Remove from heat and stir in the chopped fresh parsley.
- Serve the Revithada Stew warm, garnished with additional parsley if desired.
