Ingredients

  • Dried chickpeas - 250 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the dried chickpeas under cold water and soak them in a bowl with plenty of water for at least 8 hours or overnight.
  2. After soaking, drain and rinse the chickpeas again, then add them to a large pot with 1 liter of fresh water.
  3. Bring the pot to a boil, then reduce the heat to low and simmer for about 1 hour, or until the chickpeas are tender.
  4. In a separate pan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and fragrant, about 5 minutes.
  5. Once the chickpeas are cooked, drain them, reserving a cup of the cooking liquid, and add the chickpeas to the pan with sautéed onion and garlic.
  6. Stir in the lemon juice, dried oregano, smoked paprika, salt, and black pepper, mixing well to combine all ingredients.
  7. If the mixture is too thick, add a little of the reserved cooking liquid to reach your desired consistency.
  8. Transfer the chickpea mixture to a BBQ-safe dish and grill it over medium heat for about 15-20 minutes, stirring occasionally until slightly charred and heated through.
  9. Garnish with fresh parsley before serving.
