Ingredients
- Dried chickpeas - 250 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the dried chickpeas under cold water and soak them in a bowl with plenty of water for at least 8 hours or overnight.
- After soaking, drain and rinse the chickpeas again, then add them to a large pot with 1 liter of fresh water.
- Bring the pot to a boil, then reduce the heat to low and simmer for about 1 hour, or until the chickpeas are tender.
- In a separate pan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and fragrant, about 5 minutes.
- Once the chickpeas are cooked, drain them, reserving a cup of the cooking liquid, and add the chickpeas to the pan with sautéed onion and garlic.
- Stir in the lemon juice, dried oregano, smoked paprika, salt, and black pepper, mixing well to combine all ingredients.
- If the mixture is too thick, add a little of the reserved cooking liquid to reach your desired consistency.
- Transfer the chickpea mixture to a BBQ-safe dish and grill it over medium heat for about 15-20 minutes, stirring occasionally until slightly charred and heated through.
- Garnish with fresh parsley before serving.
