Ingredients

  • Semolina - 100 grams
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Greek yogurt - 150 grams
  • Eggs - 2 large
  • Sugar - 100 grams
  • Milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Olive oil - 50 ml
  • Water - 200 ml
  • Lemon juice - 1 tablespoon
  • Honey - 2 tablespoons
  • Chopped walnuts - 30 grams (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F) and grease a 20 cm square baking dish.
  2. In a large bowl, whisk together the eggs and sugar until pale and fluffy.
  3. Stir in the Greek yogurt, milk, olive oil, and vanilla extract until well combined.
  4. In a separate bowl, mix the semolina, flour, and baking powder.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the syrup by boiling water, honey, and lemon juice in a small saucepan for 10 minutes. Remove from heat and let cool.
  9. Once the cake is done, remove it from the oven and immediately pour the cooled syrup evenly over the hot cake.
  10. Let the cake absorb the syrup for at least 15 minutes before slicing.
  11. Serve warm or at room temperature, garnished with chopped walnuts.
