- Greek yogurt - 150 grams
- Eggs - 2 large
- Sugar - 100 grams
- Milk - 100 ml
- Vanilla extract - 1 teaspoon
- Olive oil - 50 ml
- Water - 200 ml
- Lemon juice - 1 tablespoon
- Honey - 2 tablespoons
- Chopped walnuts - 30 grams (for garnish)
Steps
- Preheat your oven to 180°C (350°F) and grease a 20 cm square baking dish.
- In a large bowl, whisk together the eggs and sugar until pale and fluffy.
- Stir in the Greek yogurt, milk, olive oil, and vanilla extract until well combined.
- In a separate bowl, mix the semolina, flour, and baking powder.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the syrup by boiling water, honey, and lemon juice in a small saucepan for 10 minutes. Remove from heat and let cool.
- Once the cake is done, remove it from the oven and immediately pour the cooled syrup evenly over the hot cake.
- Let the cake absorb the syrup for at least 15 minutes before slicing.
- Serve warm or at room temperature, garnished with chopped walnuts.
