- almond milk - 150 milliliters
- olive oil - 50 milliliters
- lemon zest - 1 teaspoon
- orange zest - 1 teaspoon
- vanilla extract - 1 teaspoon
- water - 200 milliliters
- additional sugar for syrup - 100 grams
- lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish.
- In a mixing bowl, combine the semolina, all-purpose flour, baking powder, and sugar.
- In another bowl, whisk together the almond milk, olive oil, lemon zest, orange zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Transfer the batter to the greased baking dish and smooth the top with a spatula.
- Bake in the preheated oven for about 30-35 minutes, or until golden brown and a toothpick comes out clean.
- While the cake is baking, prepare the syrup by combining water, additional sugar, and lemon juice in a saucepan.
