Ingredients

  • semolina - 100 grams
  • all-purpose flour - 50 grams
  • baking powder - 1 teaspoon
  • sugar - 100 grams
  • almond milk - 150 milliliters
  • olive oil - 50 milliliters
  • lemon zest - 1 teaspoon
  • orange zest - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • water - 200 milliliters
  • additional sugar for syrup - 100 grams
  • lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine the semolina, all-purpose flour, baking powder, and sugar.
  3. In another bowl, whisk together the almond milk, olive oil, lemon zest, orange zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Transfer the batter to the greased baking dish and smooth the top with a spatula.
  6. Bake in the preheated oven for about 30-35 minutes, or until golden brown and a toothpick comes out clean.
  7. While the cake is baking, prepare the syrup by combining water, additional sugar, and lemon juice in a saucepan.
  8. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes until slightly thickened.
  9. Once the cake is baked, remove it from the oven and immediately pour the hot syrup over the cake.
  10. Allow the cake to soak in the syrup for at least 15 minutes before slicing and serving.
