Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Zucchini - 100 grams, sliced
  • Eggplant - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the zucchini, eggplant, and red bell pepper to the skillet. Cook for about 5-7 minutes until slightly tender.
  6. Stir in the cherry tomatoes, red onion, dried oregano, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are softened.
  7. Spread the sautéed vegetable mixture evenly over the pizza dough.
  8. Sprinkle crumbled feta cheese and chopped fresh basil on top of the vegetables.
  9. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, slice, and serve warm.
