  • Cherry tomatoes - 200 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Oregano - 1 teaspoon, dried
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the quinoa pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  4. Stir in the sliced Kalamata olives and fresh spinach, cooking until the spinach wilts (about 2 minutes).
  5. Add the cooked quinoa pasta to the skillet and toss to combine with the vegetables.
  6. Sprinkle in the dried oregano, lemon juice, salt, and black pepper, and mix well.
  7. Remove from heat and fold in the crumbled feta cheese before serving.
