- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Oregano - 1 teaspoon, dried
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the quinoa pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant (about 1 minute).
- Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Stir in the sliced Kalamata olives and fresh spinach, cooking until the spinach wilts (about 2 minutes).
