  • Kalamata olives - 50 grams, pitted and halved
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water and then cook it according to package instructions, typically in 200 ml of water for about 15 minutes until fluffy. Let it cool.
  2. While the quinoa is cooking, prepare the vegetables: dice the cucumber, chop the red onion, and red bell pepper, and halve the cherry tomatoes.
