Ingredients
- Quinoa - 100 grams
- Water - 250 ml
- Chickpeas (canned, drained) - 100 grams
- Red onion - 50 grams, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Oregano (dried) - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flaxseed meal - 1 tablespoon
- Breadcrumbs - 50 grams (preferably whole wheat)
- Lemon juice - 1 tablespoon
Steps
- Rinse the quinoa under cold water and combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the quinoa is cooked and water is absorbed. Remove from heat and let it cool.
- In a large mixing bowl, mash the chickpeas with a fork until mostly smooth but still a bit chunky.
- Add the cooked quinoa, red onion, parsley, mint, garlic, olive oil, oregano, salt, pepper, flaxseed meal, breadcrumbs, and lemon juice to the bowl. Mix until well combined.
- Form the mixture into two equal-sized burger patties, ensuring they hold together. Place them on a plate and refrigerate for 15 minutes to firm up.
- Preheat a non-stick skillet over medium heat. Add a little olive oil if desired, then cook the patties for about 5 minutes on each side, or until golden brown and heated through.
- Serve the burgers in pita bread or on buns, topped with your choice of salad greens, tomatoes, and vegan tzatziki.
