Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Chickpeas (canned, drained) - 100 grams
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Oregano (dried) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flaxseed meal - 1 tablespoon
  • Breadcrumbs - 50 grams (preferably whole wheat)
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water and combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the quinoa is cooked and water is absorbed. Remove from heat and let it cool.
  2. In a large mixing bowl, mash the chickpeas with a fork until mostly smooth but still a bit chunky.
  3. Add the cooked quinoa, red onion, parsley, mint, garlic, olive oil, oregano, salt, pepper, flaxseed meal, breadcrumbs, and lemon juice to the bowl. Mix until well combined.
  4. Form the mixture into two equal-sized burger patties, ensuring they hold together. Place them on a plate and refrigerate for 15 minutes to firm up.
  5. Preheat a non-stick skillet over medium heat. Add a little olive oil if desired, then cook the patties for about 5 minutes on each side, or until golden brown and heated through.
  6. Serve the burgers in pita bread or on buns, topped with your choice of salad greens, tomatoes, and vegan tzatziki.
