- Phyllo pastry - 4 sheets
- Greek yogurt - 200 grams
- Whey protein isolate - 30 grams
- Milk (low-fat or almond) - 200 ml
- Honey - 30 grams
- Vanilla extract - 1 teaspoon
- Cornstarch - 15 grams
- Eggs - 1 large
- Butter (melted) - 30 grams
- Cinnamon - 1/2 teaspoon
- Powdered sugar (for garnish) - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, combine the milk, honey, and cornstarch over medium heat, stirring constantly until it thickens.
- Remove from heat and add Greek yogurt, whey protein isolate, vanilla extract, and cinnamon. Stir until smooth.
- In a bowl, beat the egg and fold it into the yogurt mixture until well combined.
- Lay out two sheets of phyllo pastry and brush the top layer with melted butter. Repeat this for two more sheets.
- Spoon half of the custard mixture onto the phyllo pastry, spreading it evenly.
- Fold the edges of the phyllo over the filling and roll it up tightly, then place it seam-side down in a baking dish.
- Repeat the layering and rolling process with the remaining phyllo sheets and custard mixture.
- Brush the top of the rolled pastry with melted butter and bake for 30 minutes or until golden brown.
- Allow to cool for 10 minutes, then dust with powdered sugar before serving.
