Ingredients

  • Phyllo pastry - 4 sheets
  • Greek yogurt - 200 grams
  • Whey protein isolate - 30 grams
  • Milk (low-fat or almond) - 200 ml
  • Honey - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 15 grams
  • Eggs - 1 large
  • Butter (melted) - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Powdered sugar (for garnish) - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine the milk, honey, and cornstarch over medium heat, stirring constantly until it thickens.
  3. Remove from heat and add Greek yogurt, whey protein isolate, vanilla extract, and cinnamon. Stir until smooth.
  4. In a bowl, beat the egg and fold it into the yogurt mixture until well combined.
  5. Lay out two sheets of phyllo pastry and brush the top layer with melted butter. Repeat this for two more sheets.
  6. Spoon half of the custard mixture onto the phyllo pastry, spreading it evenly.
  7. Fold the edges of the phyllo over the filling and roll it up tightly, then place it seam-side down in a baking dish.
  8. Repeat the layering and rolling process with the remaining phyllo sheets and custard mixture.
  9. Brush the top of the rolled pastry with melted butter and bake for 30 minutes or until golden brown.
  10. Allow to cool for 10 minutes, then dust with powdered sugar before serving.
