- Prawns - 300 grams, peeled and deveined

- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomatoes - 2 medium, diced
- Vegetable broth - 500 ml
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced carrot and celery, cooking for another 5 minutes until softened.
- Stir in the diced tomatoes and cook for an additional 3 minutes, allowing the tomatoes to break down slightly.
- Pour in the vegetable broth and bring to a simmer. Add the dried oregano, salt, and black pepper to taste.
- Add the prawns to the pot and simmer for 5-7 minutes, or until the prawns turn pink and are cooked through.
- Remove from heat and stir in the fresh parsley and lemon juice before serving.
