Ingredients

  • Prawns - 300 grams, peeled and deveined
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomatoes - 2 medium, diced
  • Vegetable broth - 500 ml
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced carrot and celery, cooking for another 5 minutes until softened.
  3. Stir in the diced tomatoes and cook for an additional 3 minutes, allowing the tomatoes to break down slightly.
  4. Pour in the vegetable broth and bring to a simmer. Add the dried oregano, salt, and black pepper to taste.
  5. Add the prawns to the pot and simmer for 5-7 minutes, or until the prawns turn pink and are cooked through.
  6. Remove from heat and stir in the fresh parsley and lemon juice before serving.
