Ingredients

  • Basmati rice - 150 grams
  • Prawns, peeled and deveined - 200 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1/2 medium
  • Cherry tomatoes, halved - 100 grams
  • Vegetable broth - 300 milliliters
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  3. Add the diced red bell pepper and cook for an additional 2 minutes until it begins to soften.
  4. Stir in the paprika, followed by the halved cherry tomatoes, and cook for 2 more minutes.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. In the last 5 minutes of cooking, add the prawns on top of the rice, cover, and allow them to steam until they turn pink and opaque.
  8. Once cooked, remove from heat and stir in the chopped parsley, lemon juice, salt, and black pepper to taste.
  9. Serve hot, garnished with additional parsley if desired.
