Prawn Keftedes

Ingredients

  • Prawns - 300 grams, peeled and deveined
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Lemon zest - 1 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a food processor, combine the prawns, red onion, garlic, parsley, dill, lemon zest, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed.
  2. Transfer the mixture to a bowl and add the breadcrumbs and egg. Mix well until all ingredients are combined.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the prawn keftedes and cook for about 4-5 minutes on each side or until golden brown and cooked through.
  5. Remove from the skillet and drain on paper towels. Serve warm with a side of tzatziki or lemon wedges.
