  • Feta cheese - 100 grams (crumbled)
  • Mixed salad greens - 100 grams
  • Cucumber - 1 small (diced)
  • Cherry tomatoes - 100 grams (halved)
  • Red onion - 1/4 small (thinly sliced)
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - a handful (chopped, for garnish)

Steps

  1. In a bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper to create the dressing.
  2. Heat a non-stick skillet over medium heat and add the prawns. Cook for 3-4 minutes until they turn pink and opaque, stirring occasionally.
  3. While the prawns are cooking, prepare the salad by combining mixed salad greens, cucumber, cherry tomatoes, and red onion in a large bowl.
  4. Once the prawns are cooked, remove them from the heat and let them cool slightly before adding them to the salad bowl.
  5. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  6. Sprinkle crumbled feta cheese on top and garnish with chopped fresh parsley before serving.
