Ingredients

  • Potatoes - 400 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and dried oregano, and cook for another 1-2 minutes until fragrant.
  3. Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.
  5. Return the blended soup to the pot, add lemon juice, salt, and black pepper. Stir well and heat through for an additional 5 minutes.
  6. Serve hot, garnished with fresh parsley.
