- Potatoes - 400 grams, peeled and diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and dried oregano, and cook for another 1-2 minutes until fragrant.
- Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.
- Return the blended soup to the pot, add lemon juice, salt, and black pepper. Stir well and heat through for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
