Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams
  • Red onion - 1, cut into wedges
  • Zucchini - 1, sliced into rounds
  • Cucumber - 1, sliced (for tzatziki)
  • Greek yogurt - 150 grams (for tzatziki)
  • Fresh dill - 1 tablespoon, chopped (for tzatziki)
  • Salt - to taste (for tzatziki)

Steps

  1. Cut the pork tenderloin into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create a marinade.
  3. Pour the marinade over the pork cubes and mix well to coat. Cover and refrigerate for at least 15 minutes.
  4. While the pork is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, chopped dill, and a pinch of salt in a small bowl. Mix thoroughly and set aside.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated pork cubes, cherry tomatoes, red onion wedges, and zucchini rounds onto skewers, alternating each ingredient.
  7. Grill the skewers for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice grill marks.
  8. Serve the skewers hot with tzatziki on the side and a fresh cucumber salad, if desired.
