- Pork tenderloin - 300 grams

- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams
- Red onion - 1, cut into wedges
- Zucchini - 1, sliced into rounds
- Cucumber - 1, sliced (for tzatziki)
- Greek yogurt - 150 grams (for tzatziki)
- Fresh dill - 1 tablespoon, chopped (for tzatziki)
- Salt - to taste (for tzatziki)
Steps
- Cut the pork tenderloin into 2.5 cm cubes and place them in a bowl.
- In a separate bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create a marinade.
- Pour the marinade over the pork cubes and mix well to coat. Cover and refrigerate for at least 15 minutes.
- While the pork is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, chopped dill, and a pinch of salt in a small bowl. Mix thoroughly and set aside.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated pork cubes, cherry tomatoes, red onion wedges, and zucchini rounds onto skewers, alternating each ingredient.
- Grill the skewers for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice grill marks.
- Serve the skewers hot with tzatziki on the side and a fresh cucumber salad, if desired.
