Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium, diced
  • Red onion - 1/2 small, diced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the pork tenderloin into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create a marinade.
  3. Pour the marinade over the pork cubes and toss to coat. Cover and let marinate in the refrigerator for at least 15 minutes.
  4. While the pork is marinating, prepare the cucumber salad by combining the diced cucumber, cherry tomatoes, red onion, and fresh parsley in a bowl. Drizzle with olive oil, season with salt and pepper, and mix well.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated pork cubes onto skewers, leaving a little space between each piece.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
  9. Serve the pork souvlaki with the cucumber salad on the side.
