- Pork tenderloin - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams
- Cucumber - 1 medium, diced
- Red onion - 1/2 small, diced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cut the pork tenderloin into 2.5 cm cubes and place them in a bowl.
- In a separate bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create a marinade.
- Pour the marinade over the pork cubes and toss to coat. Cover and let marinate in the refrigerator for at least 15 minutes.
- While the pork is marinating, prepare the cucumber salad by combining the diced cucumber, cherry tomatoes, red onion, and fresh parsley in a bowl. Drizzle with olive oil, season with salt and pepper, and mix well.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated pork cubes onto skewers, leaving a little space between each piece.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Serve the pork souvlaki with the cucumber salad on the side.
