Ingredients

  • Pork shoulder - 200 grams, diced
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, chopped
  • Chicken broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and celery, and cook for another 5 minutes until the vegetables begin to soften.
  3. Stir in the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
  4. Add the diced potato, zucchini, chopped tomato, chicken broth, bay leaf, and thyme to the pot. Bring to a boil.
  5. Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the pork is tender and the vegetables are cooked through.
  6. Season with salt and black pepper to taste. Remove the bay leaf.
  7. Serve hot, garnished with chopped parsley.
