Ingredients
- Pork shoulder - 200 grams, diced
- Olive oil - 1 tablespoon
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, chopped
- Chicken broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery, and cook for another 5 minutes until the vegetables begin to soften.
- Stir in the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
- Add the diced potato, zucchini, chopped tomato, chicken broth, bay leaf, and thyme to the pot. Bring to a boil.
- Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the pork is tender and the vegetables are cooked through.
- Season with salt and black pepper to taste. Remove the bay leaf.
- Serve hot, garnished with chopped parsley.
