  • Ground pork - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic cloves - 2, minced
  • Fresh oregano - 1 teaspoon, chopped
  • Fresh parsley - 1 teaspoon, chopped
  • Dried thyme - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon zest - 1 teaspoon

Steps

  1. In a large mixing bowl, combine the ground pork, minced garlic, chopped oregano, parsley, dried thyme, paprika, salt, black pepper, red pepper flakes (if using), and lemon zest.
  2. Using your hands, mix the ingredients thoroughly until well combined, being careful not to overwork the meat.
  3. Form the mixture into sausage patties, about 5 cm in diameter and 1 cm thick.
  4. Heat the olive oil in a skillet over medium heat.
  5. Cook the sausage patties for about 4-5 minutes on each side or until they are golden brown and cooked through.
  6. Remove the sausages from the skillet and let them rest for a few minutes before serving.
