- Ground pork - 300 grams
- Olive oil - 1 tablespoon

- Fresh oregano - 1 teaspoon, chopped
- Fresh parsley - 1 teaspoon, chopped
- Dried thyme - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon zest - 1 teaspoon
Steps
- In a large mixing bowl, combine the ground pork, minced garlic, chopped oregano, parsley, dried thyme, paprika, salt, black pepper, red pepper flakes (if using), and lemon zest.
- Using your hands, mix the ingredients thoroughly until well combined, being careful not to overwork the meat.
- Form the mixture into sausage patties, about 5 cm in diameter and 1 cm thick.
- Heat the olive oil in a skillet over medium heat.
- Cook the sausage patties for about 4-5 minutes on each side or until they are golden brown and cooked through.
- Remove the sausages from the skillet and let them rest for a few minutes before serving.
